FOOD FOR TOTS OWN MAC & CHEESE

Makes 6 servings
This Mac and Cheese recipe is healthy and delicious!! Your children will eat it up!  For an even healthier version, add some vegetables such as cooked peas and small pieces of cooked carrots.

Ingredients

  • 448 gm or 16qz Whole Wheat Macaroni Elbows
  • 2 cups 2% milk
  • ½ cup Margarine
  • 2 cups Shredded Cheddar Cheese
  • 4 tablespoons all purpose flour
  • Salt and pepper to taste

Directions
Bring a large pot of lightly salted water to boil.  Add pasta and cook for 7 to 8 minutes until al dente (which may vary from brand to brand).   In a large sauce pan melt margarine.  Stir in flour and seasonings.  Use a whisk and stir until smooth paste like consistency.  Add milk to mixture and stir continually until mixture starts to thicken.  Add 1 ½ cups of shredded cheddar cheese to sauce and stir until cheese melts. Drain the pasta.  Poor cheese mixture over macaroni and mix carefully.  Season with salt and pepper to taste.  Transfer macaroni and cheese into medium baking dish.  Sprinkle the remaining ½ cup of cheddar cheese over the top dish.  Bake at 350F for about 20-25 minutes or until golden brown and serve.
