BBQ Yams or Sweet Potatoes
These delicious barbequed yams (or sweet potatoes) are crisp
on the outside and melt in your mouth sweet on the inside.
They are an excellent source of Vitamin A and potassium.
Ingredients:
- 3 Yams or Sweet Potatoes
- 1 tablespoon of olive oil
- 1 clove of garlic, puréed or finely diced
- Salt and pepper to taste
Directions
1. Light your BBQ and ensure it’s hot.
2. Place olive oil, garlic and salt and pepper into a large bowl and mix together.
3. Wash and peel yams.
4. Cut yams into 4 to 6 wedges depending on the size of the yam.
5. Place yam wedges in the bowl and lightly coat with oil mixture.
6. Place yams in a vegetable basket or place directly on the grills cross-wise so they don’t fall through.
7. BBQ for 4 to 6 minutes over high heat until the outsides are crispy.
8. Flip over and repeat.
9. The outsides will be crispy and the insides soft and steamy.
