Healthylicious Mini-Pizza

Makes 2 Servings:

Ingredients:

  • Whole Wheat English Muffins, sliced in half
  • 1/2 cup tomato sauce or pizza sauce
  • 3/4 cup grated mozzarella or cheddar cheese
  • Mushrooms, peppers, olives or onions (also try adding leftover chicken or tuna)
  • Salt and pepper to taste

Directions


1. Preheat oven or toaster oven to 350 degrees Celsius.

2. Toast English Muffins until golden brown - approximately 2-3 minutes.

3. Spread spoonful of sauce over each muffin half.

4. Cover the sauce with desired toppings.

5. Sprinkle a little salt and pepper.

6. Cover the toppings with mozzarella or cheddar cheese.

7. Place on cookie sheet and bake for 3-4 minutes or until cheese is melted.

8. Cool and serve with cold vegetables or a salad on the side.
